Blueberry Lemon Ice Pops
- 1/2 cup Blueberries
- 1/2 cup Powdered erythritol (or any sweetener – to taste)
- 1/4 cup Lemon juice
- 1/4 cup Full-fat coconut cream
- Blend all ingredients in a blender to make a smooth puree.
- Taste and adjust sweetness as desired.
- Pour the mixture into popsicle molds.
- Freeze for about 4 hours, until solid.
- Your ice pops are ready to enjoy.
